Ingredients
- Beef, chicken, or lamb bones (with marrow)
- Water
- Apple cider vinegar (2-3 tbsp)
- Vegetables (onions, carrots, celery)
- Herbs (bay leaf, thyme, parsley)
- Salt, peppercorns
Instructions
- Roast bones at 400°F for 30 minutes.
- Place bones in large pot, cover with water.
- Add vinegar, let sit 30 minutes.
- Bring to boil, reduce to simmer.
- Simmer 12-24 hours (beef), 8-12 hours (chicken).
- Add vegetables and herbs last 2 hours.
- Strain, season, store or freeze.
